4 Levels of French Fries: Amateur to Food Scientist | Epicurious

  • Published on:  Tuesday, October 8, 2019
  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of french fries. And then we brought in a food scientist to review their work. Which fries were the best?

Check out the recipe on the ICE blog: https://www.ice.edu/blog/palak-patel-french-fries

Is it just me or could you literally just open a bag of steak fries, fry them in oil and get some ketchup and like. 8 minutes it's done.

For me it's redundant to hear someone say "queso" cheese sauce. Queso is cheese in Spanish. My brain is just trying to work out what "queso" means to you guys. XD

Chef 3. Look at all the juices on her cutting board from the herbs. Ramsay would be furious.

I tried the level 1 and leve 2 chef technique but not the sause. The level 3... well can't wait a week to eat them, anyone who tried please review them. I prefer the level 1 the fries are crunchy on the outside and soft on the inside the taste is surprisingly delicious (I though it would be soggy, and it was a lovely surprise) but it takes forever to fry. The 2 level chef technique takes longer than 1, cook, wait till cool, freeze then fry.. twice... ohhh the wait. The fries are very good but after a while (I tried this more than once... or twice...) the vinegar and the double frying takes a tole to the stomach.
